Baked Chicken Nuggets

A couple weeks ago I started following a cooking blog. That is crazy for me as I don't cook! But I LOVE this blog. It is called 5dollardinners and it is WONDERFUL. Not only are the recipes CHEAP to make, but they are easy and nutritious. I will be adding this blog to my blog roll for my readers because I really think you should check it out. Even someone that doesn't cook like me can find some good, easy recipes. I love that many of her recipes don't call for those obscure ingredients that I non-cook NEVER has, like ginger, onion root, etc!
One recipe that really caught my eye was for Chicken Nuggets. My kids LOVE nuggets, but I don't like that they are fried so not the best for them. Well Erin at 5dollardinners has what she calls Oven Fried Chicken Nuggets. I had to give these a try since they are actually just baked.
I did tweek her recipe a bit because my family are a bunch of wussies and even griped that it was still too much pepper, lol. Here is what I did, and you can compare that to what she did here
A little over 1 lb of Chicken tenderloin chopped into nugget size pieces(I got this for .06 today at Kroger with sale and $3 winetag chicken coupon)
2 tbsp mustard whisked together with 3 tbsp milk(she used spicy or dijon mustard)

Erin used flour with paprika, pepper and salt for this step. I used croutons and that I banged into crumbs and skipped the paprika (got the croutons free at Heb during a meal deal promo) I didn't quite have enough croutons so I grabbed one of my Kashi Heart to Heart 1 serving cups I got free at Target with printable and banged it to finish covering my remaining chicken(couldn't taste a noticeable difference)

This is what the nuggets looked like after they were cooked. I thought they were yummy, but I chose to also dip them in Spicy mustard to eat. Dh said I added to much pepper, lol. I think they were delicious!
